6 chicken breasts, cut into chunks
2 cups grated unsweetened coconut
1 can coconut milk
2 tbsp butter
1/2-1 inch chopped fresh ginger
(or 1/2 tsp ground ginger)
1 clove garlic, grated
grated rind and juice of 2 limes
1/2 tsp chili powder
3 onions, chopped
1 tsp salt
1 tsp sweetener
Melt butter and gently saute coconut until lightly browned. Add
ginger, garlic, lime juice and rind, chili powder, onion, salt and
sweetener, and cook and stir for 5 minutes. Add chicken pieces and
coconut milk. Simmer 15-20 minutes or until chicken is cooked through.
Stir occasionally.
Note. If you have a food processor it is easy to throw the onions and
limes it it together and just pulse until they are well-chopped.
