Flounder Oscar

6-8 fish fillets (flounder, tilapia, sole are good choices)
salt & pepper to taste
1/2 lemon, thinly sliced (use other half in sauce)
1 bunch asparagus
l lb. lump crab meat
recipe for mock hollandaise, below

On a piece of aluminum foil, place one fish fillet, seasoned with salt & pepper. Top with a few spears of asparagus and then a good handful of crab meat (try to keep it in a clump) . Drizzle with a little hollandaise and top with a thin slice of fresh lemon. Wrap into a packet; set aside and continue with remaining ingredients to make 6-8 packets. Place on heated grill set to medium heat. Cook packets for approximately 15-20 minutes depending on thickness of your fillets. Do not flip or turn. Serve in packet.

Mock Hollandaise Sauce:
1/4 c. mayonnaise
2 T. butter
1/2 t. prepared mustard
2 t. lemon juice & zest of 1/2 lemon
dash tabasco
dash cayenne
Heat ingredients for hollandaise and set aside. will thicken as it sits. Great on eggs benedict or florentine too.
