Well, Phoo. Too Much Starch.
Remember that ham I roasted for my birthday party? It didn't get completely eaten at the party. I mean, it was nearly seventeen pounds to start with, and there was a lot of other food. We ate leftover ham for a few days -- sliced, scrambled in eggs, whatever. Finally we were down to a meaty ham bone. So I did the traditional thing: I made soup.
And against my best judgment, I made split pea soup, just because That Nice Boy I Married and I love the stuff. I did puree and add three cans of green beans, to increase the volume and dilute the carbs. However, one pound of split peas contains 274 grams of carbohydrate. 116 grams of that are fiber, but still, that's 158 grams of usable carb in the pot. We got about 8 servings out of it, so that's about 20 grams per bowl, not including the onion, carrot, celery, garlic, etc.
Split peas have quite a low glycemic index -- about 32. That gave my soup a low glycemic load, somewhere between 7 and 9. Plus the soup was pretty nutritious, and reasonably filling. As carb foods go, it has to be classed as a fairly "good" carb.
So why are my jeans tight? Argh. Back to meat, eggs, and veggies.
And did I mention the effect on my gut? Not to be graphic, it made overdosing on polyols seem benign.
I won't do that again any time soon.

I went 'hog-wild' with my low carb 'stash' yesterday and am paying for it today (some days are just like that)! I was
'up' two and a half pounds today!!! I knew better, at the time, but did it, anyway (like so many of us, I'm sure!). So far, today, I'm being a 'good girl', though. I've found that my carb limit is only 20 per day to lose weight, or stay at a steady weight, or I'll gain very quickly, it seems. I've also found counting every little carb helps ALOT, even the ones that are not there, supposedly! Like for 0-carb sodas and such--they say that, but, since Splenda's used in them and it has 'less than a carb' per teaspoon...I count 1.5 carbs per 12oz soda (1 per 8ozs). Info I gleaned from your cookbooks, Dana(of which I have many!) and also from Ms. Moshiers'(more good reading and sampling!). My husband and I are making chili for supper tonight, so I'll probably see a 'rise' in my weight tomorrow, too! (Yes, I have tried soy black beans and even turnips in it and don't care for them, at all.) But, sometimes, you just have to make what sounds good or you won't even stick with the low carb life- style (like your split pea soup episode!). Still, this is the best way M.H. and I have found of losing weight and feeling good about it. Any encouragement any of you can offer would be appreciated! (Thanks!) I have a question to ask, also. Have any of you out there in low-carb land ever heard of or found Splenda-sweetened M&Ms? I would truely love to find some of those, if they make them, that is! I put in a request to their site, but won't get an answer till this coming Monday or Tuesday (3-4 business days, after sending said request, their site had on it). Glycemic load
I've been following the glycemic load diet for a couple weeks now. Even staying under 30 GL a day, I am not losing. It just seems to be too many carbs for me.
And I have been known to gain 5 lbs overnight from a plate of whole wheat spagetti.:(
But, this too shall pass.

I know I do best on a diet primarily made up of animal protein, fat, and some veggies.
But FTR, whole wheat pasta does *not* have a low GL!

I hate to disagree with the person who said that you couldn't have gained weight with just one high-carb meal, but it's true. I had 2 pieces of cheese pizza a few days ago. The next day my pants were tight and my weight was up 2 pounds. Some of us are more sensitive to carbs than others.
Gaining from carbs
Yep, I bloat up quickly, probably with water. Any body builder will tell you that they "smooth out" when they add carbs back to their body because they replenish their glycogen stores and thus increase water weight.

uh, not to doubt you, but are you sure your jeans are tight just from eating a day's worth of split pea soup?
Do you focus on your hunger/satiety signals?
I'm finding that lately if I overeat ANYTHING, I can gain weight, good carb included, meats, included.
When I focus on my hunger/satiety signals I keep my weight down.
Honestly, I follow low glycemic load for my health and blood sugar levels. Not overeating takes care of the rest of it.
Now I am jealous

Don't doubt that you have been exercising. Do remember that you mentioned that you thought it was easier with company. I also know that I should be doing so and with the weather have not been. A couple other people at the meeting mentioned that they were frustrated with this. Was trying to make a positive suggestion not a comment on if you were exercising or if that was what was causing the bloat. Do figure that you have to "work off" at least some of this now, and figured that this might be a positive way to do it. Especially now that summer is ending and outdoor stuff is not as "available" or convenient.
