A Holiday For Us!

Y'all know that Mardi Gras is coming, right? And that Mardi Gras ("Fat Tuesday") is the big blowout celebration before Lent, the season of penance and fasting prior to Easter in the Catholic and Episcopal churches (and maybe some others; I confess I do not know.) The traditional Mardi Gras food is pancakes, which isn't the best for us. But I just learned that in England the previous day is "Collop Monday" -- and see what Wikipedia has to say about Collop Monday: The British name Collop Monday is after the traditional dish of the day, consisting of slices of leftover meat (collops of bacon) along with eggs. It is traditionally eaten for breakfast and is part of the traditional Lenten preparations.

Bacon and eggs? Count me in on Collop Monday!
