[Htt-recipes] low carb Italian

Tonight is the finale of the Sopranos, and we traditionally have  
italian food while we watch the show. Since we have been doing low  
carb, this has mostly been meatballs in a low sugar spaghetti sauce  
or a big salad. Does anyone have any other ideas for low carb, EASY  
Italian? I'm diabetic and cannot eat any kind of pasta without  
sending my blood glucose soaring. Thanks.

By the way, I tried Dana's Skillet Chicken Florentine last week.  It  
is fabulous!  I highly recommend it!
