I made up a recipe this weekend that ended up being very very good! I
call it pizzaloaf. Mix 2# ground beef with Italian seasoning, 1 egg and
about 2-3 Tbls pulverized sunflower seeds (use food processor...I used
garlic roasted sunflower seeds). Mix well and spread into rectangle.
Layer mozzarella cheese, pepperoni slices, small can chopped black
olives, and onion down center of hamburger mixture. Fold sides up and
seal. Bake at 350 for about 40 minutes (until juices run clear). Serve
with warmed pizza sauce (Walmart's Great Value brand has minimal carb
count).
Also, spaghetti squash with Italian sausage and Alfredo sauce is very
good...we like the garlic Alfredo sauce.
(We, too, enjoy the Skillet Chicken Florentine on a regular basis.)

Subject: [Htt-recipes] low carb Italian
Tonight is the finale of the Sopranos, and we traditionally have italian
food while we watch the show. Since we have been doing low carb, this
has mostly been meatballs in a low sugar spaghetti sauce or a big salad.
Does anyone have any other ideas for low carb, EASY Italian? I'm
diabetic and cannot eat any kind of pasta without sending my blood
glucose soaring. Thanks.
By the way, I tried Dana's Skillet Chicken Florentine last week. It is
fabulous! I highly recommend it!
