Hi, I'm here. This is what I take to all potlucks at the church. It's super easy and if I don't bring it the congregation gets mad! Cheryl in VA
 
Elegant Spinach
1 - 16 oz pkg. frozen spinach
1- 8 oz. pkg. Cream Cheese (can use full or lower fat - don't use fat free)
1/2 stick butter
1/4 cup Parmesan Cheese + Parmesan to Sprinkle on top
 
Heat your spinach in the microwave until hot (my 1300 watt microwave takes 4 minutes and I cook it right in the bag with no extra water). Drain the spinach water out by placing in a colander and pressing down with a cereal bowl. Put spinach in a microwave safe 1.5 qt. bowl (I use my Pyrex mixing bowl). Add the butter and cream cheese and put a little of the spinach on top so it doesn't splatter when it melts. Add in the Parmesan and mix well. Heat in microwave until they melt. (I start with 1 minute). Stir again to make sure it is well mixed. Sprinkle extra Parmesan on top. Either put under the broiler of your oven for a couple of minutes to brown or run it back in the microwave for a minute to melt the cheese. YUM!
