This recipe is *really* adaptible.  My Indian Spiced Creamed Spinach 
(www.foreverinbluejeans.net) is very similar, and you can vary it by 
changing the spices and/or cheeses (I put feta in it for a Greek version, 
for example).

Interestingly, I never liked spinach before Atkins, when I developed my 
Indian spiced recipe, except for an Indian dish called palak paneer or saag 
paneer -- creamed spiced spinach with cheese.<G>
