  There was a request on one of the lists for a low carb replacement for mushroom soup for casseroles. Give this a try. Blessings - Cheryl in VA



  Low Carb Mushroom Sauce to replace Mushroom Soup in Recipes

   

  1-4 oz can Mushrooms (8 oz can would be fine if you want it more mushroom-y)

  2 Tblsp. Onion, minced

  1 Tblsp. Butter

  1 Cup Heavy Cream

  ½ tsp  Chicken Bouillon Granules

  Salt and Pepper to taste

  ½ tsp. Xanthan Gum

   

  Drain Mushrooms reserving liquid. Sauté Mushrooms and Onions in Butter until Onions are translucent. Add Cream, reserved Mushroom Liquid, Chicken Bouillon Granules and Salt and Pepper. Mix well, cook until comes to a light boil (bubbles just appearing- not a full boil) then turn stove to low. Sprinkle Xanthan over the top of the sauce (I keep mine in a salt shaker to allow me to sprinkle it – you can sift it through a strainer if you don’t have it in a shaker). Whisk until to desired thickness adding more Xanthan if needed – it will get a bit thicker as it cools).
