Pork Tenderloin Encrusted in an Aged Jack Cheese
Serves 4
Ingredients:
For the pork:

4 pork chops pounded thin
1 1/4 cups almond flour
1 1/3 cups finely grated aged Jack cheese (subs: muenster, gouda, bel
paese, samsoe)
2 large eggs
Salt and freshly ground black pepper
4 tablespoons butter
2 tablespoons extra virgin olive oil

Method:
Place the pork between two sheets of plastic wrap. Using a meat mallet
or heavy rolling pin, gently pound the pork until flattened to ½ inch.
Cut each chop in half so you have 8 medallions.
Mix the almond flour and Jack cheese together in a plate. Lightly
whisk the eggs in another plate to blend. Sprinkle the pork generously
with salt and pepper. Dip the pork pieces into the eggs and then into
the cheese crumb mixture to coat, patting the crumb mixture to adhere.

Melt 2 tablespoons of butter with 1 tablespoon of oil in a large
nonstick frying pan (this is important to avoid a big mess) over a
medium to high heat. Add 4 pork medallions to the pan and cook for 2-3
minutes on each side or until golden brown and just cooked through.
Add the rest of the butter and oil to the pan and cook the other 4
medallions.

Transfer the cooked pork to a paper towel-lined plate to absorb any
excess oil and butter.
