[Htt-recipes] checking in - help needed

I agree with everyone else. Just try and get together things that will
be easy on you. Wash and bag a bunch of lettuce for salad. Bake some
chicken breasts/thighs or better yet, make a run to Costco. They have
chicken strips pre-packaged and in the freezer so you can take out what
you need. Keep lots of washed and sliced veggies on hand with some
lower fat cream cheese. How about some sliced cheese, lunch meat (such
as roast beef) and mayo to make lettuce wrap "sandwiches." Throw a big
roast in the crock pot so you have leftovers. Hardboil a bunch of eggs
for egg salad. If it is late at night when you get home, how about a
couple of scrambled eggs, with some cheese and perhaps mushrooms? This
would seem to be "lighter" fare than a big, heavy meal.
I cannot imagine what you are going through, but please know everyone is
keeping you in our thoughts and prayers.
